The monk Parakeet is a species of true parrot native to Argentina. Though you find populations in North America, Europe, and Chiapas Mexico. Specifically in the Triunfo Biosphere reserve and the surrounding highlands. These birds, slightly smaller than the ones we find around London, have become a symbol of freedom in Chiapas. This coffee comes from smallholders in this cloud forest and has been named after the bird, known locally as Cotorras.
Creamy mouthfeel with sweet chocolate and raisin notes and red berry acidity.
