Rocko Mountain is home to a lot of coffee growing smallholders taking advantage of the altitude and fertile soil here. This coffee comes from a community of farmers who grow their coffee in 10 hectares of forest. Using the shade of the tress to protect their plants. After harvest they deliver their cherries to Siz Agro, who have invested in 8 washing stations on the Idido side of the Rocko Mountain. With these washing stations Six Agro try to improve quality and traceability for single communities .They have also started pre-financing farmers communities during the off season to help them improve their production and picking, with the help of a team of agronomists that are based locally all year around to advise on improvements required to achieve the best possible results. This coffee was hand sorted by placing the cherries on a sorting table at the processing plant and removed any under/over ripe or defective cherries before being laid on raised beds and turned every twenty minutes. The cherries which lie roughly 2cm thick are covered during the hotter part of the day that is normally between 11AM until 3PM to prevent fast drying, and the drying time can vary from 14 to 18 days depending on humidity.
