Paula Trujillo is known for growing high quality coffees in a wide range of varietals, ranging from the more traditional varieties like Castillo and Bourbon, to more coveted and rare ones such as Gesha or this Wush Wush. The young producer who looks after this 11 hectare farm previously studied chemical engineering, but now her studies focus on pre and post harvest techniques. Paola’s mother, Maria Angela taught her the value of sharing knowledge, and because of this, Paola now provides courses on her farm for her young neighbours. This coffee was exposed to a dry aerobic fermentation of 24 hours and then placed inside Grainpro bags for 50 hours maintaining a temperature below 22°C. Finally, the coffee was pulped, gently washed, and placed on raised beds until ideal moisture content was achieved.
