The town of Buesaco lies on a ridge high in the Andes mountains in the Nariño department. The Cooperativa Cafes Especiales de Nariño has its offices cupping lab and warehouses there, where the coop collects coffees from smallholders whose farms are tucked in the slopes surrounding the town. The Buesaco ‘Cherry lot’ is juicy, clean, and floral, named for its fruit-forward cup profile created by allowing the coffee to rest longer in the cherry either on the tree or after being harvested.
