Stewed apple mouthfeel, fresh apricot acidity with plum and Guylian shell notes

This coffee was picked by Mel, a recent addition to the Dark Arts team.
Mel is originally from Salvador and it was really special and important to her to get to pick and name this coffee; basing the name off of a Central American legend. La finca has been passed through the generations since 1927 when Petrona Palacios Diaz purchased it with the intention of planting bourbon coffee trees. The farm is currently owned by Petrona’s grand-nephew Fernando, and through the generations the farm expanded both in size and equipment. Fernando’s father, Federico, developed Café Tuxpal and invested in a wet mill to gain independence and knowledge in processing the cherries. Café Tuxpal is now involved in the entire coffee chain from bean to cup, benefiting from an exceptional microclimate that offers dry winters and warm summers, a rare phenomenon in a country largely dominated by tropical weather.
