Stewed apple mouthfeel, fresh apricot acidity with plum and Guylian shell notes


This coffee was picked by Mel, a recent addition to the Dark Arts team.
Mel is originally from Salvador and it was really special and important to her to get to pick this coffee. This coffee is clean, sweet and juicy, her favourite things in a cup. This coffee is also named after a Central American legend that is very popular in Salvador. La Finca has been passed through the generations since 1927 when Petrona Palacios Diaz, who the farm is named after, purchased it with the intention of planting bourbon coffee trees. The farm is currently owned by Fernando Pacas Diaz, Petrona’s grand-nephew. Through the generations, the farm expanded both in size and equipment. The current owner’s father, Federico, developed Café Tuxpal and invested in a wet mill to gain independence and knowledge in processing the cherries. Café Tuxpal is now involved in the entire coffee chain from bean to cup.
The area around the Santa Ana volcano in the Apaneca Ilamatepec mountain range benefits from an exceptional microclimate that offers dry winters and warm summers, a rare phenomenon in a country largely dominated by tropical weather.
