To the southwest of the Narino region, roughly 250km from the west coast of Colombia lies the Galeras Volcano. It is one of 16 volcanos worldwide known as ‘The Decades Volcanos’. These active volcanos are subject to special study by ‘IAVCEI’ and are picked due to their history of violent eruption combined with proximity to dense populations. This coffee comes from a collection of smallholders whose farms are around Galeras. This is a ‘sugar cane’ decaf. Meaning that the beans are steamed to open up their pores, yes, like in a spa. Then they are rinsed in a mixture of Ethyl Acetate a by product from sugar cane processing, and mountain water for a period of 10 hours. This removes 97% of the caffeine. After which they are rinsed again and then dried. The whole process takes around 24 hours.
